Experiment with its rich lemon-lime aroma and you will soon be replacing lemon grass, kaffir lime leaf and even straight lemon with lemon myrtle. It pairs well with fish, poultry and seafood, and gives punch to sauces, aioli and mayonnaise. Stir into yoghurt or add to baked goods such as shortbread.
