Servings: 10-12 1cup portions

Directions:

1) In a large soup pot, brown 1 chopped onion and 2 small chopped zucchini.

2) Pinch bag below noodles, pour noodles into a bowl and set aside.

3) Add remaining package contents and 10 cups water to pot; boil and simmer covered until cooked, (approx 2 hrs).

4) In the last 15 mins of cooking, add 500g cooked, chopped bacon, 2 cans (800g) diced tomatoes, 2 cups spinach and noodles. Season with salt and pepper.

Garnish with parmesan cheese.

Slow cooker instructions:  Brown onion, zucchini and bacon, add all ingredients, except noodles. Cook on high for 6-8 hrs. Add noodles in the last 20 minutes.
